SSCA have state of the art and highly sophisticated culinary labs, each dedicated to specific learning by the students. All our kitchen labs and the support areas, spread over 12,000 sq ft area, have been designed specifically like professional kitchens, replete with modern and latest equipment for practical learning.


Foundation Kitchen Lab

Well equipped 20 work stations await the first year students at SSCA. The first year in this professional foundation kitchen imparts all the basic French culinary skills and creates a strong foundation of all systems, processes, tools and best practices.

Bulk Kitchen Lab

Team work, coordination and nuances of cooking in large quantities are the key learning’s that students gain during their second year of academics at SSCA. Exploring the vast potential of various cuisines within India, SSCA students experience the diverse range of delicacies while cooking in bulk quantities.

Advanced Kitchen Lab

Bakery Lab

One is drawn towards this unique lab simply by the aromas of fresh breads or cookies being baked. Students learn the scientific importance of time, temperature and raw material quantity proportions while preparing a range of sweet and savory delights that are sure to please everyone’s taste buds.

Patisserie Lab

Students indulge in the art of artisan cake icings, plated desserts, chocolate and pastry preparations in this lab. Our culinary demonstrators and instructors offer intensive training on top quality ingredients and handling advanced equipment’s to SSCA students.

Demo Kitchen Lab

Compact fully equipped demo kitchen with guest seating capacity for 20 guests, is ideally designed to demonstrate culinary dishes for smaller group of people.

Training Restaurant

A 44 seater fine dine training restaurant which is specially designed for educational environment, where students learn the art of fine service and culinary practices. Chef and Food and Beverage faculties support the culinary arts students in ensuring that guests enjoy a contemporary and elegant dining experience.

Larder Lab

Horsd’oeuvres, cold sauces, salads, cold buffet presentations and many more exotic preparations are learnt by students in the larder lab.

SymbiBake- Student-run-Patisserie and Bake shop

SymbiBake is a student driven bake shop offering freshest breads, croissants, muffins, and cakes among other items on menu items. Students work under the guidance of Certified Bakery and Pastry Chef Faculties to make these items to perfection.

All menu items are of highest quality and are made in house without addition of artificial colors or flavors!! Popular items include Chocolate Mint Cake, Date & Walnut Cake, Walnut Brownie, Truffle Tarts and Croissants. Vegan and gluten-free options will be available on order.

Food Photography Studio at Symbiosis School of Visual Arts and Photography (SSVAP)

It’s an art to capture those perfect food display moments! And to do that we have curated a special course by the faculty from Symbiosis School of Photography. The course covers various principles and nuances of food photography.

For Food Ingredients Research and Culinary Innovation

The Smart Culinary Lab is a research and innovation lab for experimentation of food ingredients and for study and development of flavours, textures, aroma, recipes and culinary innovation. The main characteristic of this lab is to encourage the user to innovate in the field of gastronomy and trigger newer and potentially beneficial projects in the culinary field. The Smart Culinary Lab is a laboratory for co-creation, prototyping, development and testing of the food uses that promotes gastronomy and technology experimentation.

Studio Kitchen- work in progress

A state of the art and one of its kind in the country, the Studio Kitchen is a platform for specialised culinary demonstrations and workshops by culinary experts from across the world. This 130-seater fully airconditioned culinary studio.

Open to Air Cooking Kitchen Lab

Humans essentially have migrated from outdoor cooking to cooking in controlled environment. Outdoor cooking methods differs substantially from kitchen-based cooking; the most obvious difference being lack of an easily defined kitchen area. In an effort to know and understand the various techniques and flavours obtained from cooking in different cooking media, we have created a speciality lab offering variety of cooking methods like pit roasting, barbeque and chulha cooking, tandoor, open fire spit cooking, etc. The open to sky area above the studio kitchen will be designed using stone counters.
